
This cinnamon has quite a different flavor profile than the more prevalent cassia cinnamon. Ceylon, also known as "true" cinnamon, has a delicate and more complex flavor, with essence of orange, floral notes and warmth. It has much less of that "hot and spicy" cinnamon flavor than cassia. This is the cinnamon you'll find in Mexican Hot Chocolate or mole poblano. It works well with Indian cuisines too. In baking, it pairs well with citrus and vanilla.
